Sometimes, the very best meals are the simplest ones. As much as I truly love to cook, I also enjoy relaxing after a long day. I just don’t always want to have to worry about cooking dinner! I’m sure you all know exactly what I mean.
On those nights we typically end up ordering takeout. It’s hard to treat takeout like a treat when its been our backup plan for so long. It’s not good for anybody and I’m determined to eat way less of it in 2019!
I see a lot of “quick” recipes out there that still take 15 minutes of prep and end up dirtying half of your dishes. When I say I want a quick meal, I mean want to be eating in 10 minutes or less. It doesn’t line up with our health goals and it’s not exactly easy on the wallet, either.

My egg roll bowl recipe takes 10 minutes, is low-carb, and loaded with protein! You can also make it paleo/whole30 friendly by swapping out soy sauce for coconut aminos. If you’re like me and prefer soy sauce, it’s still a great low-carb meal packed with real food. Not to mention, all of the ingredients cost around $7. That’s what I call a win-win!
This dish is great reheated in a frying pan the next day, or even the microwave if you’re in a pinch for time. On an average day, this recipe makes enough for my husband and I to have dinner one night and lunch for me the next day.
We’ll definitely be keeping this in our regular meal rotation. My parents have made a very similar recipe, but they add Siracha which add a nice kick and allows you to mix it up a bit.

I need to rant and rave about my All-Clad d5 pans for a moment… I’ve always thought that stainless pots and pans were so beautiful and way healthier than teflon, but they seemed like they’d be impossible to keep clean and shiny. To keep my pans looking shiny and like new, I use Bar Keepers Friend Powdered Cleanser & Polish when they start to look dingy, or if there’s residue that I can’t get off with a sponge. It makes it incredibly easy to keep my stainless steel looking like a million bucks.
Quick & Healthy Egg Roll Bowls
Ingredients
- 1 1-pound roll ground pork sausage
- 1 bag of coleslaw mix
- 1 tsp minced fresh garlic
- 1 tsp minced fresh ginger
- 3 tsp soy sauce or coconut aminos (or more to taste)
- green onion for garnish
Directions
- In a skillet or wok, cook the ground sausage until completely cooked.
- Add ginger and garlic and cook until fragrant – about 2 minutes.
- Add the coleslaw mix and soy sauce.
- Cook until cabbage just starts to wilt, or wait for it to soften a bit – totally up to you. I like it sort of soft, but still crunchy. Just like the inside of an egg roll!
- Garnish with green onion and sesame seeds if you’re feeling fancy. Enjoy!
